  1. In a small bowl, combine the ground achiote, garlic, oregano, cumin, and allspice.
  2. Add the orange juice, lime juice, and apple cider vinegar to the spice mixture. Stir well to form a vibrant, aromatic marinade base.
  3. Whisk in the olive oil, sea salt, black pepper, and brown sugar (if using) until fully emulsified and the marinade is a brilliant reddish-orange color.
