Boursin Cherry Tomato Pasta

CrunchySpoon3466
Creamy, herby Boursin cheese meets juicy cherry tomatoes and al dente pasta for a dish that’s far greater than the sum of its parts. The cheese melts into the tomato pan sauce, creating a luxurious, tangy coating for each noodle, while lemon zest and basil add brightness and freshness. A little garlic and the option for a hit of chili provide depth and gentle heat. This is peak weeknight comfort with minimal effort and maximum flavor—perfect for savoring late summer tomatoes. Make sure to stir in a bit of reserved pasta water for an ultra-silky, restaurant-quality sauce.
Ingredients
Instructions
  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve 1/2 cup pasta water, then drain.
  2. Meanwhile, in a large skillet, heat olive oil over medium heat. Add the sliced garlic and cook until fragrant but not browned, about 1 minute.
  3. Add the cherry tomatoes, salt, black pepper, and red pepper flakes (if using). Cook, stirring occasionally, until the tomatoes soften and begin to burst, 5-7 minutes. Use a spoon to gently smash some tomatoes for a saucier consistency.
  4. Reduce heat to low. Add the whole Boursin cheese to the center of the pan. Let it soften for 1-2 minutes, then gently stir into the tomatoes to create a creamy sauce.
  5. Add the cooked pasta directly to the skillet. Toss to coat, adding reserved pasta water a splash at a time until the sauce reaches your desired creaminess.
  6. Remove from heat. Stir in lemon zest and half the basil. Taste and adjust seasoning as needed.
  7. Plate the pasta and top with remaining basil and Parmesan cheese, if desired. Serve immediately.
