  1. Preheat a grill pan or cast iron skillet over medium-high heat until very hot.
  2. Pat chicken thighs dry and season on both sides with salt and pepper. Drizzle lightly with olive oil.
  3. Place chicken on the hot pan and cook for 5-6 minutes per side until charred at the edges and cooked through (internal temp 165°F). Remove and let rest 5 minutes.
  4. While chicken cooks, in a small bowl combine olives, capers, shallot, parsley, lemon juice, and 2 tbsp olive oil. Stir well and set aside.
  5. Slice rested chicken and arrange on a platter. Spoon olive-caper salsa generously over the top.
