Preheat a large skillet or griddle over medium heat.
Spread mayonnaise on one side of each bread slice; this will be the outside for maximum crispiness.
On the non-mayo side of 2 slices, spread a thin layer of whole grain mustard.
Layer half the cheddar and Swiss cheese evenly over the mustard.
Arrange pickle slices and pickled red onions over the cheese. Sprinkle with black pepper and half the fresh dill.
