  3. In the same skillet, quickly warm the cooked chicken breast (or tofu) and black beans until heated through, about 2-3 minutes. Season lightly with salt and pepper.
  4. Arrange cooked quinoa as the base in a large bowl. Top neatly with sautéed spinach, warmed chicken and black beans, avocado slices, and cherry tomatoes.
