  1. Rinse the basmati rice under cold water until the water runs clear. Cook rice according to package instructions; keep warm.
  2. While rice cooks, heat 1 tbsp olive oil in a large nonstick skillet over medium-high heat until shimmering. Add chicken pieces, season with salt and pepper, and sear until golden on all sides, about 5–6 minutes. Remove chicken to a plate.
  3. Add remaining 1 tbsp oil to the skillet. Add chopped onion and bell pepper. Sauté until onion is translucent and bell pepper slightly softened, about 3–4 minutes.
  4. Return chicken to skillet. Pour in the Masala Simmer Sauce, stirring to coat everything evenly. Lower heat to medium, cover, and simmer for 8 minutes, or until chicken is cooked through.
  5. Stir in frozen peas and Greek yogurt. Simmer uncovered for 2–3 minutes more, until peas are hot and sauce is creamy. Taste and adjust seasoning if needed.
