While cauliflower roasts, heat 1 tbsp olive oil in a large skillet over medium-high. Add beef strips in a single layer, season with salt and pepper, and sear undisturbed 2-3 minutes. Flip and cook another 1-2 minutes until browned but still pink in the center. Remove beef to a plate and tent with foil.
