  1. Soak rice noodles in warm water for 25-30 minutes until pliable, then drain.
  2. Heat 1 tbsp oil in a large wok or skillet over medium-high. Add chicken and cook, stirring, until browned and cooked through, 4-5 minutes. Remove and set aside.
  3. Add remaining oil to the pan. Add garlic and stir-fry for 30 seconds until fragrant, then add broccoli and bell pepper. Stir-fry for 2-3 minutes until slightly tender but still crisp.
  4. Push vegetables to one side, add eggs to the empty space, and scramble until just set. Stir into veggies.
  5. Add drained noodles, chicken, fish sauce, brown sugar, and lime juice. Toss everything together and stir-fry for 2-3 minutes until heated and coated.
