  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add garlic, ginger, and red onion. Stir-fry for 1-2 minutes until fragrant.
  3. Add ground bison, breaking it up with a spatula. Cook until browned, about 4-5 minutes.
  4. Stir in carrot, bell pepper, and zucchini. Cook for 2-3 minutes until just tender but still crisp.
  5. Add Napa cabbage and stir-fry for 1 minute until slightly wilted.
  6. In a small bowl, mix fish sauce, soy sauce, lime juice, brown sugar, and black pepper. Pour over the meat and vegetables.
  7. Toss everything together and cook for another minute to combine flavors.
  8. Remove from heat. Stir in half of the cilantro and mint.
  9. Serve over steamed jasmine rice or vermicelli noodles.
  10. Top with remaining herbs, roasted peanuts, and sliced chili. Enjoy immediately.
