These Thai-inspired grilled peanut butter chicken skewers bring together the creamy richness of peanut butter with zesty lime, savory soy, and aromatic ginger. The marinade makes the chicken juicy and bursting with bold, nutty flavor, while grilling gives a smoky char that’s perfect for summer evenings. A sprinkle of fresh cilantro and crunchy peanuts add color and texture. Serve these skewers as an appetizer or a light dinner with a side of jasmine rice or a crisp cucumber salad for a complete meal.
Ingredients
Instructions
If using wooden skewers, soak them in water for 15–30 minutes to prevent burning.
In a mixing bowl, combine peanut butter, soy sauce, honey, lime juice, sesame oil, garlic, ginger, chili flakes, and water. Whisk until smooth. Reserve 3 tbsp of this mixture for basting.
Add chicken cubes to the remaining marinade, tossing to coat well. Marinate for at least 15 minutes (or up to 2 hours in the fridge).
Preheat a grill or grill pan over medium-high heat and lightly oil the grates.
Thread marinated chicken onto skewers.
Grill chicken skewers for 3-4 minutes per side, basting once with reserved sauce, until chicken is cooked through and has nice grill marks.
Transfer skewers to a platter. Drizzle with remaining sauce, then sprinkle with chopped cilantro and peanuts. Serve with lime wedges.
