  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side, until golden and cooked through. Remove chicken from skillet and set aside, loosely covered.
  3. In same skillet, add remaining 1 tbsp olive oil and garlic. Sauté for 30 seconds until fragrant.
  4. Add cherry tomatoes and cook for 2-3 minutes until softened.
  5. Return chicken to skillet. Add lemon zest and juice, tossing to coat the chicken and tomatoes in the pan sauce. Cook for 1 more minute to blend flavors.
  6. Sprinkle with fresh parsley before serving. Serve the chicken sliced with the pan sauce and tomatoes spooned over the top.
