Wash and gently dry the berries. In a bowl, toss berries with 1 tbsp sugar and lemon zest. Set aside to macerate for 10 minutes.
In another bowl, whisk together mascarpone cheese, heavy cream, honey, vanilla extract, and remaining 1 tbsp sugar until smooth and slightly thickened (soft peaks).
