  1. In a bowl, combine the sliced chicken breast with 1 tbsp soy sauce, 1 tbsp cornstarch, and Shaoxing wine. Mix well and let marinate for 10 minutes.
  2. In a small bowl, make the sauce: whisk together remaining 1 tbsp soy sauce, oyster sauce, sugar, sesame oil, and 1 tbsp water.
  3. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and stir-fry until just cooked through, about 3-4 minutes. Remove chicken from the pan and set aside.
  4. Add the remaining 1 tbsp oil to the pan. Sauté garlic and ginger until fragrant, about 30 seconds.
  5. Add onion, carrot, and bell pepper. Stir-fry for 3-4 minutes until just tender but still crisp.
  6. Return chicken to the pan. Add green onions and pour in the sauce. Toss everything together and stir-fry for another 1-2 minutes until well coated and heated through.
