  1. Preheat the oven to 425°F (220°C). Arrange the eggplant cubes on a baking sheet, drizzle with 1 tbsp olive oil, season with salt and pepper, and toss to coat. Roast for 20-25 minutes until golden and soft, tossing halfway.
  2. While eggplant roasts, heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat. Add the onion and sauté until soft, about 5 minutes. Stir in the garlic, cumin, coriander, cinnamon, and red pepper flakes; cook until fragrant, 1 minute.

  4. Stir in the crushed tomatoes, roasted eggplant, and season with salt and pepper. Simmer on low for 10 minutes, allowing flavors to meld.
