Wash and pat dry the cucumber. Using a mandoline or sharp chef’s knife, thinly slice the cucumber lengthwise into ribbons, about 1/8 inch thick. Lay ribbons flat on a paper towel to remove excess moisture.
In a medium mixing bowl, combine goat cheese, crème fraîche, chives, dill, lemon zest, black pepper, and salt. Whip with a spatula or hand mixer until smooth and fluffy.
To assemble: Place one cucumber ribbon flat on a work surface. Pipe or carefully spread a thin layer of herbed goat cheese mixture along its length. Top with another cucumber ribbon. Repeat with another thin layer of cheese, forming 3–4 layers total (ending with cucumber on top).
Trim the sides for clean edges, then cut crosswise into 2-inch rectangles or squares for elegant finger bites.
Arrange mille-feuille bites on a platter. Top each with a tuft of microgreens and a pinch of chopped pine nuts if using. Serve chilled.
