Brioche Bun Classic Cheeseburger with Arugula & Dijon Mayo

This burger recipe takes classic American comfort and gives it a dash of bakery technique with pillowy brioche buns and a focus on proper browning for maximum flavor. Each bite delivers juicy, perfectly seasoned beef, melted cheddar, and the peppery freshness of arugula, all layered with tangy Dijon mayo. The soft, buttery bun is toasted for texture contrast and a rich base. Heirloom tomato and red onion add color and a sweet, crisp finish. Perfect for a foggy San Francisco evening or a summer weekend cookout.

Instructions
  1. Preheat a large skillet or grill pan over medium-high heat.
  2. Gently form the ground chuck into 4 loose patties, just wider than your buns. Season both sides generously with salt and pepper.
  3. Brush the cut sides of the brioche buns with softened butter.
  4. Toast buns, cut side down, in the skillet or on a griddle until golden, about 2 minutes. Set aside.
  5. Add olive oil to the hot skillet. Place patties in the pan and cook undisturbed for 3-4 minutes, until a dark crust forms.
  6. Flip patties, top each with a slice of cheddar, and cook another 2-3 minutes for medium-rare to medium. Cover the pan briefly to melt the cheese.
  7. Mix mayonnaise and Dijon mustard together. Spread a generous layer on both sides of each bun.
  8. Layer arugula on the bottom buns, then add beef patties. Top with tomato, red onion, and the top buns. Serve immediately.
