  1. In a large bowl, combine ground pork, chopped shrimp, napa cabbage, green onions, garlic, ginger, soy sauce, oyster sauce, sesame oil, white pepper, sugar, and cornstarch. Mix thoroughly until sticky and well blended.
  2. Set up a clean workstation. Place a dumpling wrapper in your palm. Spoon about 1 tablespoon of filling into the center.
  3. Brush the edge of the wrapper with beaten egg. Fold the wrapper in half, pressing edges to seal and pleating as desired. Repeat with remaining wrappers and filling.
  4. Line a steamer basket with parchment paper or cabbage leaves. Arrange dumplings in a single layer, leaving space between each.
  5. Bring water to a boil in a wok or pot. Place steamer basket over boiling water, cover, and steam for 8–10 minutes, until dumplings are cooked through and wrappers turn translucent.
  6. Meanwhile, mix together dipping sauce ingredients in a small bowl.
