Ingredients
Instructions
  1. Pat fish fillets dry with paper towels. In a small bowl, combine lemon zest, half the lemon juice, minced garlic, olive oil, smoked paprika, oregano, salt, and pepper. Rub mixture evenly over both sides of fish fillets. Let marinate for 10 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Oil the grates lightly. Grill fish for 3-4 minutes per side, until opaque and nicely charred. Remove and rest for 2 minutes.
  3. While fish grills, toss cherry tomatoes, cucumber, red onion, parsley, dill, and red wine vinegar in a bowl. Drizzle with remaining lemon juice and season with a pinch of salt and pepper.
  4. Plate the fish fillets and top generously with the fresh tomato-cucumber salad. Serve immediately.
