Craving dessert but not a fan of fruit-laden breakfast bars or protein-packed pancakes? These Vanilla Protein Powder Fudgy Brownie Bites turn your protein powder into a genuinely craveable treat. They’re rich and chocolatey, with a classic brownie texture—fudgy and just a little chewy—thanks to a blend of almond flour, Greek yogurt, and cocoa. Subtle vanilla notes balance the chocolate, and the option for a sprinkle of mini chocolate chips gives bursts of real brownie decadence. Perfect for a midday treat or post-dinner snack, these bites are low-calorie, high in protein, and absolutely not a smoothie!

Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or spray with nonstick spray.
In a medium bowl, whisk together the protein powder, cocoa powder, almond flour, salt, and baking powder.
In another bowl, mix the applesauce, Greek yogurt, almond butter, sweetener, vanilla extract, and egg until smooth.
Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
If using, fold in the mini chocolate chips.
Spread the batter evenly in the prepared pan. It will be thick; use a spatula to flatten.
Bake for 15-18 minutes, until set but still soft in the center. Do not overbake for fudgy texture.
Let cool completely in the pan before slicing into 8 brownie bites. Store in an airtight container at room temperature for 2 days or refrigerate up to a week.
