Rinse the sushi rice until the water runs clear. Combine rice and water in a small pot, bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes, then remove from heat and let sit covered for 10 minutes.
Fluff rice and gently fold in seasoned rice vinegar and a pinch of salt. Let cool slightly.
While rice cooks, heat sesame oil in a skillet over medium-high. Add tofu cubes and cook until golden on all sides, about 6-8 minutes. In the last minute, drizzle with soy sauce and maple syrup, tossing to glaze. Remove from heat.
Prepare bowl toppings: slice avocado, julienne carrots, slice cucumber, shred cabbage, and cook edamame if needed.
