Preheat oven to 350°F (175°C). Grease and line three 8x8-inch square pans (or bake cakes in batches).
In a large bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well, then add vanilla extract.
In a separate bowl, whisk flour, baking powder, and salt. Add half to the wet mixture, mix, then add milk, then remaining flour. Mix until just combined.
Divide batter in half; to one half, add cocoa powder for chocolate layers. Mix just until combined.
Pour batters into pans (for three layers: one vanilla, one chocolate, one marbled if desired). Smooth tops. Bake 22-25 minutes or until a toothpick comes out clean. Cool completely.
Meanwhile, make the frosting: Beat 1 cup butter until creamy. Add powdered sugar, heavy cream, and vanilla extract. Beat until fluffy. Set aside.
Once cakes are cool, level tops. Cut cakes into 1-inch cubes.
Arrange cubes into a 3x3 grid, alternating colors/flavors to mimic a Rubik’s Cube. Use frosting to glue cubes together in a cube shape, covering all visible sides.
Chill assembled cube cake for 30 minutes to set frosting.
For mirror glaze: Sprinkle gelatin over 2 tbsp water in a bowl. In a saucepan, heat corn syrup, sweetened condensed milk, and white chocolate until melted and smooth. Remove from heat, add gelatin, and stir until dissolved. Let cool to 90°F (32°C).
Divide glaze into 6 bowls; tint each with a gel food color (red, blue, green, yellow, orange, white).
Pour glaze over corresponding cake cubes, using a spoon or squeeze bottle. Let excess drip off, then chill cake to set glaze.
Carefully transfer cake to serving platter. Clean edges as needed. Serve and enjoy!
