In a medium bowl, whisk together yogurt, lemon juice, turmeric, cumin, chili powder, garam masala, salt, and 1 tbsp olive oil.
Add paneer cubes, onion, and both bell peppers to the marinade. Toss gently to coat all pieces evenly. Let marinate for at least 15 minutes (up to 1 hour for more flavor).
Meanwhile, prepare the Mint Yogurt Dip: In a small bowl, combine yogurt, mint, cilantro, green chili (if using), cumin powder, lemon juice, and salt. Mix until smooth and refrigerate until serving.
