  2. In a small bowl, whisk Greek yogurt with 1 tbsp lime juice and a pinch of salt to brighten the flavor. Set aside.
  3. Fill a large shallow dish with warm water. Working one at a time, dip a rice paper wrapper in water for 8-10 seconds until just pliable, then lay on a damp clean kitchen towel.
  4. Spread 2 tbsp of the yogurt mixture in the lower third of the wrapper. Top with a layer of cilantro, carrots, cucumber, bell pepper, and sprinkle with chopped peanuts.
  5. Fold in the sides and roll tightly away from you to seal. Repeat with remaining wrappers and fillings.
