  1. In a medium saucepan, heat the water over medium heat until steaming but not boiling.
  2. Add the sliced shiitake mushrooms and grated ginger. Simmer for 5 minutes until mushrooms are tender.
  3. In a small bowl, mix the miso paste with a ladle of the hot water to dissolve, then stir the mixture back into the pot.
  4. Add the cubed tofu, soy sauce, and baby spinach. Simmer gently for another 2-3 minutes, just until the spinach wilts.
