  2. Pat chicken wings very dry with paper towels. In a large bowl, toss wings with salt, baking powder, smoked paprika, garlic powder, and black pepper until evenly coated. Drizzle with olive oil and toss again.
  3. Arrange wings in a single layer on the wire rack. Let sit at room temperature for 15 minutes to allow seasoning to penetrate.
