Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan or small quarter sheet pan with parchment paper.
In a large mixing bowl, mash the bananas until mostly smooth.
Add the egg, applesauce, maple syrup (or honey), and vanilla extract. Mix until well combined.
Stir in the oats, cinnamon, baking soda, and salt. Mix until evenly incorporated. Fold in walnuts and chocolate chips if using.
Spread the batter evenly in the prepared pan, smoothing the top.
