  1. In a bowl, combine the chicken with 1 tablespoon soy sauce and 1 teaspoon cornstarch. Toss to coat and let marinate while prepping vegetables.
  2. In a small bowl, whisk together remaining 1 tablespoon soy sauce, oyster sauce, sesame oil, 1 tablespoon water, sugar, and the rest of the cornstarch. Set aside.
  3. Heat your Blackstone griddle to medium-high. Add 1 tablespoon vegetable oil and spread it out.
  4. Add chicken in a single layer. Sear for 2–3 minutes per side until golden and cooked through. Transfer chicken to a plate.
  5. Add remaining 1 tablespoon oil to the griddle. Add garlic, ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant.
  6. Add broccoli, carrots, and bell pepper. Stir-fry for 3–4 minutes until just tender. Add snap peas and cook 1 minute more.
  7. Return chicken to the griddle. Pour in sauce. Toss everything together for 1–2 minutes, letting the sauce thicken and coat the ingredients.
  8. Sprinkle with green onion tops and sesame seeds. Serve hot over jasmine rice.
