  1. In a large bowl, whisk together olive oil, lemon zest and juice, garlic, rosemary, parsley, Dijon mustard, salt, and pepper. Add chicken breasts and marinate at least 20 minutes (or up to overnight in the fridge).
  2. Preheat grill (or grill pan) to medium-high. Remove chicken from marinade and grill for 6-7 minutes per side, or until internal temperature reaches 165°F and juices run clear. Let rest 5 minutes, then slice thickly.
  3. While chicken grills, combine edamame, cucumber, cherry tomatoes, and red onion in a large bowl.
  4. In a small bowl, mix Greek yogurt, dill, apple cider vinegar, salt, and pepper to make a creamy dressing. Pour over edamame mixture and toss to coat.
  5. To serve, divide the salad among plates, top generously with sliced grilled chicken, and garnish with extra herbs and lemon wedges if desired.
