Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread them evenly on the baking sheet.
Roast for 20-25 minutes, flipping halfway, until sweet potatoes are golden and tender.
While the sweet potatoes roast, combine the black beans, chopped spinach or kale, red onion, and cilantro in a large bowl.
In a small bowl, whisk together Greek yogurt, lime juice, and honey to make the dressing. Season with a pinch of salt.
