  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread them evenly on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until sweet potatoes are golden and tender.
  4. While the sweet potatoes roast, combine the black beans, chopped spinach or kale, red onion, and cilantro in a large bowl.
  5. In a small bowl, whisk together Greek yogurt, lime juice, and honey to make the dressing. Season with a pinch of salt.
