  2. In a bowl, mix Greek yogurt, Dijon mustard, lemon juice, Herbes de Provence, salt, and pepper. Coat chicken breasts with half the mixture; reserve the rest for dressing.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts 2 minutes per side, then transfer to a baking sheet and roast for 12–15 minutes until cooked through. Let rest, then slice.
  4. While chicken cooks, bring a pot of salted water to a boil. Blanch green beans for 2–3 minutes until crisp-tender; drain and rinse in cold water.
  5. Place eggs in a saucepan, cover with water, and bring to a boil. Reduce heat and simmer 7 minutes for jammy yolks. Cool in ice water, then peel and halve.
  6. In a small bowl, whisk reserved yogurt mixture with red wine vinegar and honey to make the dressing.
