  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Wash and thinly slice potatoes (about 1/16 inch thick) using a mandoline or sharp knife. Submerge slices in a bowl of cold water with 2 tbsp vinegar for 10 minutes to remove excess starch and add tanginess.
  3. Drain and pat potatoes very dry with towels. In a large bowl, toss slices with vegetable oil until evenly coated.
  4. Arrange slices in a single layer on prepared baking sheets. Bake for 20-25 minutes, flipping halfway, until golden and crisp. Keep a close eye to avoid burning the thin chips.
  5. While chips bake, mix together salt, smoked paprika, onion powder, garlic powder, black pepper, dill, brown sugar, sweet paprika, tomato powder (if using), mustard powder, and cayenne in a small bowl.
  6. When chips are finished, transfer to a large bowl while hot. Sprinkle spice mix over chips and toss gently to coat evenly. Taste and adjust seasoning as needed.
  7. Let chips cool for 5 minutes—they will crisp up further. Serve immediately or store in an airtight container for up to 2 days.
