Ingredients
Instructions
Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat dry thoroughly with paper towels.
Season both sides of the steaks generously with salt and freshly ground black pepper.
Heat a heavy skillet (cast iron preferred) over high heat until very hot. Add the oil and swirl to coat.
Place the steaks in the skillet and sear undisturbed for 2-3 minutes, until a deep brown crust forms.
Flip the steaks and add the butter and smashed garlic cloves to the pan.
Tilt the pan and, using a spoon, baste the steaks with the melted garlic butter for another 2-3 minutes for medium-rare, or until desired doneness.
Transfer the steaks to a plate and let rest for 5 minutes.
Top each steak with the browned garlic cloves and a generous sprinkle of flaky sea salt before serving.
