Pat salmon fillets dry and season both sides with kosher salt and cracked black pepper.
Heat 1 tbsp olive oil in a nonstick skillet over medium-high heat. When hot, add salmon fillets skin-side up. Sear for 3-4 minutes, until golden, then flip and cook another 2-3 minutes until just cooked through. Transfer to a warm plate and tent with foil.
Reduce heat to medium. Add minced shallot to the same pan and sauté until soft, about 1 minute.
Pour in the Mumm Sparkling Brut Prestige, scraping up any browned bits. Simmer until reduced by half, about 2-3 minutes.
