  3. Return wok to high heat. Add remaining 1 tbsp oil. Add garlic, ginger, and onion; toss for 30 seconds until fragrant.
  4. Add bell pepper, snap peas, and broccoli. Stir-fry with a forward scooping motion for 3-4 minutes until crisp-tender.
  5. Return tofu to wok. Pour in soy sauce, rice vinegar, maple syrup, and chili garlic sauce. Toss to coat everything evenly, cooking another 1-2 minutes until glossy and fragrant.
  6. Turn off heat. Drizzle with toasted sesame oil. Scatter scallions and cashews/peanuts (if using) on top.
