  1. In a bowl, combine grated Asian pear, soy sauce, sesame oil, brown sugar, minced garlic, black pepper, and 1/2 tsp toasted sesame seeds. Add beef and toss to coat. Marinate for at least 20 minutes, stirring once halfway through. (Prep slaw during this time.)
  2. For the kimchi slaw: In a mixing bowl, combine shredded Napa cabbage, chopped kimchi, julienned carrot, rice vinegar, honey, and gochugaru if using. Toss well and let quick-pickle for at least 15 minutes, tossing occasionally.
  3. Heat a high-sided skillet or cast iron pan over high heat. Add neutral oil. When shimmering, add marinated beef in a single layer (work in batches if needed). Sear undisturbed for 1-2 minutes until deeply caramelized, then stir-fry for another 1-2 minutes until just cooked through. Do not overcrowd the pan.
  4. Transfer seared beef to a serving plate. Sprinkle with extra sesame seeds and sliced scallions.
