  1. Preheat a grill or cast iron skillet to medium-high heat.
  2. Divide the ground beef into 4 equal portions (about 6 oz each). Gently form each into a patty roughly the size of your buns, with a slight indent in the center. Season both sides with salt and pepper.
  3. In a small bowl, mix together mayonnaise, ketchup, mustard, and pickle brine to make the burger sauce. Set aside.
  4. Butter the cut sides of each brioche bun. Toast buns cut-side down on the grill or skillet until golden brown, 1-2 minutes. Set aside.
  5. Cook the patties for 3-4 minutes per side (for medium), flipping once. In the last minute of cooking, place a slice of cheddar on each patty and cover to melt the cheese.
